How to remove goo from Okra
People either love Okra or hate it. When cooked correctly it is a very tasty vegetable. I think most people are not aware that there are ways to get rid of the slime from them and that is why they hate Okra. Once we get rid of the goo from Okra they are ready to go into stews and curries. In India, Okra is also added to stir fries and made into dry curries.
In this recipe we are going to see how to remove the goo or slime from Okra. This is the basic step we do before using okra in any recipe and it always works. Depending on which recipe the Okra is going into, you can cut the pods into 1/2" to 1" inch pieces. This method, though, does not work for whole pods. Do remember to nip the head and tail of each pod before chopping them.
Ingredients:
- Okra 1/2 pound
- Oil 1 to 2 tablespoons
Method:
- Nip the head and tail of each okra pod and cut them in 1/2" to 1" pieces as preferred.
- Add them to a pan and turn the heat to medium.
- Stir the okra in intervals of fifteen seconds for about two minutes. At this point the pieces of okra will start to give out the slime and start sticking to the ladle.
- Add a tablespoon of oil to the okra and keep stirring as per above instructions.
- Slowly the okra pieces will start to change color.
- When you see brown specs on the okra skin and the pieces stop sticking to the ladle they are ready. You will also notice there is no more slime coming from the okra pieces.
- Now you can add them in your recipes.
Notes:
- Try to use a non stick pan to fry the okra. Otherwise you will need more oil as okra will stick to the pan and burn.
- You need to keep stirring the pieces every few seconds so that they fry evenly on all sides.
- Just be patient while frying the okra. They will take some time to change color.
- You can add enough salt and chili powder at the very end of cooking and serve the okra as a dish by itself.
