Orange Roughy Baked In A Creamy Coconut & Tomato Sauce
Orange Roughy is one of our favorite fishes. It's delicate flesh goes well with mild spices. We prefer to bake this fish than cook it in any other way. This is a quick recipe if you have all the ingredients in your pantry. It can be baked and served in just half an hour. You get a decent amount of sauce after the fish is baked so it can be served with rice. My favorite method is to soak up some crusty bread in the sauce with the fish on the side.
Before you begin the recipe season the fish fillets with chili powder, salt, a pinch of turmeric and some lemon juice. You can let the fish sit in this seasoning for half an hour.
Combine all the ingredients for the sauce right in the baking dish. This is definitely a one pot dish. If you don't have tomato paste, use a small ripe tomato. Slice it or chop it up and add to the sauce. There will be a difference in taste but it will still be delicious. Better still try it both the ways at different times. Make sure the sauce cotes the fish completely before baking. If you like you can let the fish to marinate in the sauce for sometime before baking.
If you have edible coconut oil at home use it in this recipe otherwise any oil is fine. I used olive oil.

Ingredients:
Orange Roughy Fillets 3
For Sauce:
Thick Coconut Milk 1/2 cup
Sliced Onions 1/8th cup
Tomato paste1tbsp or1small tomato
Garlic cloves 2, minced
Ginger, size of a penny
Coriander powder 1/4 tsp
Cumin powder 1/4 tsp
Chili powder to taste
Turmeric powder, a pinch
Cardamom pods 2
Cinnamon stick 1/2" piece
White Vinegar 2 tsps
Oil 1 tbsp
Method:
Preheat the oven to 420° F.
Season the fish fillets with a sprinkle of chili powder, a pinch of turmeric powder, salt and lemon juice.
In a baking dish mix all the ingredients under sauce except for vinegar. Taste the sauce and add more salt and chili powder if needed.
Now add 1 teaspoon of the vinegar and mix. Taste the sauce. If you feel like you need more vinegar add the other teaspoon too.
Place the fish fillets in the sauce and turn them a couple of times to make sure the sauce coats all over the fish.
Bake for twelve to fourteen minutes or until the fish is fully cooked.
